Stuffed Grape Leaves

Recipes Ingredients

  • 1 ½ lbs Minced beef meat 85% Lean 15% fat
  • 2 cups Short grain rice
  • 1 Packet of Ziyad Brand Liyye Seasoning
  • ⅓ cup Regular oil
  • 2 tbsp Ziyad Brand Ghee
  • 1 ½ tsp Ziyad Brand Allspice
  • 1 tsp Ziyad Brand Ground Nutmeg
  • 2 tbsp Salt
  • 1 ½ tsp Black pepper
  • 1 tsp Mansaf seasoning (Optional)


Step 1

Soak the rice in boiling water for half an hour with 2 tbsp of salt. Then wash it few times and drain.

Step 2

Add the meat and the seasoning and mix well. Add the Ziyad Brand Liyye Seasoning and mix well with the oil and ghee. Now for the Ziyad Grape Leaves, all you need is to wash it under running water and you are now ready to start rolling.

Step 3

(Stuffing Grape Leaves) Lay the grape leaves on a flat surface. Add one tsp of rice snd meat mixture to the middle of the leaf, fold in both sides and roll as tightly as you could just like you would with an egg roll.

Step 4

I love to add bone in meat at the bottom of my pot, sautéed, with a little bit of salt and pepper definitely optional. Then add the grape leaves in layers making sure they are snug in the pot.

Step 5

(Cook Grape Leaves) For the water solution you will need: 2 cups of water, 2 chicken stock, 1 tsp of Ziyad Brand Onion Powder, 1 tsp of black pepper, 1 tsp of salt, 2 Tbsp of Sultan, Brand Olive Oil, Juice of two lemons, 2 Tbsp of Ziyad Brand Tomato Paste.

Step 6

Mix well and add it to the pot (make sure it covers most of the grape leaves, add more water if you need to.) let the mixture come to a boil for 10 minutes on high, then lower the heat until it’s cooked and tender about 1.5 hours. Start checking at 60 minutes.
